1. Vanilla Cake

When it comes to vanilla cake, certain ingredients make all the difference. A premium quality vanilla extract will bring out its full potential, while brown sugar will take away from its classic vanilla taste and add moisture that could damage your batter. Granulated sugar, on the other hand, gives a lighter and fluffier result.

Whisk the dry ingredients (flour, baking powder, and salt). This step aerates the flour, which creates a light and airy cake. Next, beat together butter, sugar, and oil until soft and creamy before slowly adding eggs one at a time; this allows egg whites to whip up and incorporate air into the batter to produce lighter and fluffier cakes. Lastly, stir in milk and vanilla as an addition.

This type of frosting is popularly used to decorate cakes as it holds its shape without melting off of their surface, and it’s relatively forgiving, meaning any issues with your frosting can easily be remedied if they occur.

This chocolate buttercream requires just three ingredients and less than 10 minutes to create! The recipe is very forgiving; any problems can easily be remedied by adding more powdered sugar or liquid as needed to thin it down, making this the ideal formula for beginners!

Beat the butter until light and fluffy in a large mixing bowl or stand mixer fitted with a whisk attachment before gradually beating in confectioners sugar and cocoa powder on low speed until thoroughly combined, before continuing beating on medium-high speed for three additional minutes, stopping to scrape down the bowl occasionally. Finally, mix in salt and vanilla extract.

Note: Fine sea salt should be added here as it helps balance out the sweetness of the frosting and prevents it from tasting too sweet. Alternatively, add milk or half and half for thinner frosting if necessary.

Frosting should be used within 48 hours, though it can be stored in an airtight container at room temperature for two days before placing it in the freezer for 2-3 months, just as with other buttercreams. When defrosting, allow it to come to room temperature before use.

3. Caramel Sauce

Caramel sauce is one of the most accessible dessert ingredients to create and requires just four ingredients – granulated sugar, butter, heavy cream, and vanilla extract – making this recipe quick and effortless! No candy thermometer is required for success!

Start by pouring granulated sugar into a medium heavy-duty saucepan (avoid nonstick), heating on medium heat while stirring continuously with a heatproof rubber spatula or wooden spoon. As soon as the sugar starts melting into thick brown-amber liquid, form clumps that need constant stirring with a high heatproof rubber spatula or wooden spoon – keep close watch as this stage can go quickly! This step must be done without leaving anything out, as burning may occur rapidly if sugar gets onto hot surfaces!

Once the sugar reaches a rich amber color and aroma that resembles that of roasted nuts, remove from heat. Slowly whisk in butter while continuously whisking. As soon as all of it has been fully integrated into the mixture, pour in heavy cream gradually while whisking continuously until thoroughly mixed in and smoothed out.

Cream of tartar can help prevent crystallizing as the syrup cools, providing extra assurance against potential failure. Though many of our readers have made delicious caramel sauce without it, adding safeguard against possible errors provides added peace of mind.

Once the sauce has cooled completely, it can be stored in an airtight container in the fridge for up to two weeks. For later use, it can also be heated up either microwave-style or double boiler-style until warm and pourable again.

4. Chocolate Marshmallows

To make chocolate marshmallows, begin by lining a 10″ square pan with foil and smoothing out any creases as best you can. Sprinkle gelatin over water and allow it to bloom while you prepare the remaining ingredients.

Once the sugar syrup reaches 240oF (the softball stage), begin whisking your gelatin mixture at medium-high speed. Slowly pour in hot sugar syrup while whisking until all has been added down one side of your bowl while continuing to beat. Continue beating until light and fluffy (approximately 10 minutes). At that time, add vanilla.

Sift the powdered sugar and cocoa together until all surfaces have been lightly covered with it. Transfer marshmallow fluff to the powdered sugar mixture, coating well. Dust the knife you used to cut into squares with some of this mixture before slicing into 78 (1-inch squares). Transfer onto a rimmed baking sheet; drizzle melted bittersweet chocolate on top, and allow to set, and serve!

For a thinner layer of chocolate, microwave the bittersweet chocolate for 1 minute at a time and stir. Repeat as necessary until the desired thickness has been reached. Or dip marshmallows into melted semisweet chocolate and decorate them as desired using sprinkles, colored sugar, shredded coconut, or crushed peppermint, as well as small candies such as mini M&Ms.

In a separate bowl, beat 3/4 cup of cream until soft to stiff peaks form before gently folding it into the chocolate mixture until evenly combined. Transfer the mousse into dessert cups and chill for approximately 2 hours before serving.
